I believe you can use it. Just get as much evidence as you can gather. If you have a website or social media presence for your business, even better.
Worst case scenario; you might be called for interview but as long as you finally get to Canada, all's well that ends well.
I don't have online presence. I'm just relying on the from the people I have worked for and people that know is what I do.

You can still use the 3 years work experience if it's in NOC A, B or 0. It doesn't matter that you're not currently working there now. If you can get a reference letter, you're good to go. You are free to pursue the plumbing career when you get to Canada, it's not compulsory to work in the profession you filled in your PR application.
thank you @ifeoma. the job I had experience on is not in NOC A, B, or O. I have tried to twist the job position to match it but to no avail. that's why I'm thinking of using Plumbing work.

Please I need your advice on this: I'm a Nigerian. I have my Bsc in engineering. I have 3 years of work experience in construction and fabrication industry but have been laid off for one year and six months now as my job position became redundant . I have been doing Plumbing work since after my secondary school education and even now that I don't have a job.
So I want to migrate to Canada through express entry as a plumber. My question is thus: how do I convince Canadian embassy that I'm a professional Plumber where as I don't have any certification or license to back it up as there is no really government agency that regulate artisans in Nigeria to issue license if one meet certain requirements. please my good people advice me on how to go about this.
