Finally got around to it. Jamaican curry chicken with rice, salad and fried plantains.

Chop onions, green peppers, red peppers, garlic and Scotch bonnet peppers or any other very hot pepper.

Mix well with the chicken and season with salt, black pepper, seasoned salt, thyme (fresh thyme preferred ), Jamaican curry powder( my preferred brand is jcs reggae country, but Blue mountain a close second).

Let it sit for at least an hour

Heat whatever grease you like. (I used ghee this time)

Separate the chopped veg from the chicken, add some curry powder and saute on medium heat until soft.

Add the chicken, then water and/or coconut milk and bring to a boil. I like to add water to the bowl I marinated the chicken with and use it to clean all the marinade into the food.

Once it comes to a boil, add peeled chopped Irish potatoes if you want to, cover and lower to medium heat for 20-5 minutes or until the chicken is so tender it falls off the bone.

Eat 😄

1. Was the dough mixed and kept in the fridge overnight. This was the proofed one as I forgot to take a picture last night.

Yesterday's breakfast.

French toast:
French bread or any bread that is not too sweet or soft.
One egg
Milk
Sugar, coffee creamer, pancake syrup or honey
Cinnamon powder
Pinch of salt
Tablespoon of flour

Blend everything together. If you have one of those bullet blenders, the quantity should be about where my finger is. Measurements didn't need to be exact, just to the taste that works for you.You want it to be foamy after you blend it. No blender, just hand mix, but the texture will be different. You can even use evaporated milk and water.

Slice your bread, put on tray in single layer and soak for at least ten minutes each side. If I to do it ahead of time, I prefer overnight for really fluffy French toast.

If you have an air fryer or oven, that is the best way for a really fluffy inside and a nice crispy outside. Otherwise, you can put a little butter in a pan and fry on medium heat. It won't be as fluffy though.

Put in a single layer in air fryer, pour any remaining liquid on top and air fry at 375 degrees for 16 minutes (flip halfway). If using oven, increase to 400 degrees. Don't forget to use a liner like foil or parchment paper so you don't have to clean😁

I have come to think that you probably do not rate/enjoy garri and soup, as much as you do other food you prepare, that is why your presentation of them here is seemingly uncharacteristically less-appealing.

Do not take my word for it. Look through your post history or gallery of the few times (I think 5) you have ed a pic of it.

Is it psychological for you? Maybe you do not consider garri as a staple, thus you see it as something you use to hold "belle", till you can prepare or eat something more fulfilling?

No, it's that when I some want to eat traditional I throw down and didn't care what it looks like. I just want to eat it🙄

Also, if I'm unfreezing something previously cooked (I cook soup in bulk and freeze), taking a picture is an after-thought. If I was cooking a new pot, I would do the same as any food. That's been in my freezer for months.

Lol, in Naija I get my meat from Artisan. I've dropped their info here before. This is just the first page. Whatsapp them for full pricelist. They make their own sausages,etc and they are so good!

An insurance write-off is triggered when the cost to repair the damage to the car exceeds the value of the car itself. It may be body damage or mechanical damage. It is also automatically triggered if there is damage to the frame/chassis, regardless of cost, as that is now a safety issue. First-hand knowledge handling insurance repairs in Texas.

Please stop saying this because it is false. I have owned mechanic shops both in Nigeria and the USA. NO ONE does that.

Those claiming to know more than the manufacturer are clearly stupid, it is like arguing about the order of alphabets.
I am going to assume you were handed 20W-50 engine oil when you went to a store or a mechanic and said you want to change your car engine oil, by my two big balls, many oil sellers at 'garages' and even road side mechanics will do the same, the last time i was at Ilesha garage in Akure to change my handbrake lining (a family member keeps leaving it on while driving), sitting at the parts seller's shop, about three people came to ask for oil to service their car, they were all handed 20w-50, they paid and left.
Oh well, this is how it is with many people, they don't have the knowledge about oils, check your engine cap and have a look at the oil viscosity written on it by your manufacturer, that's what you should use whether you live in Antarctica or Death valley, USA, now you might change to the manufacturer's oil grade and notice your car smoking shortly after or even immediately, if this is the case then you must fall back to your 20W-50, this is because the engine is high mileage and or has been abused for quite a long time (with very thick 20W-50).
Some change back to the manufacturer's recommended grade and vehicle doesn't smoke or starts making weird sounds, I'll advise you don't fall back anyways, car is old (16 years) and you have abused it for two years, keep it that way so you don't draw much nearer the consequences of using very thick oils over the years.

Even for over heating, people that has suffered it more in Nigeria are those using thin oils, you can do your research. I sha understand that you are a business man grin
My thermostat and every other factory fittings still intact tho. Na just the oil dey fear me on how to revert back to factory recommendation. My point is you can’t completely downplay the 20w50 oil which has been serving people over the years without issue.

"Cold start" means first start when the engine is cold (typically first thing in the morning after sitting overnight, or during the day after it hasn't been driven for hours and the engine is no longer warm) , not the temperature outside 🙆🏾🤣

This is why you sometimes have to leave the car at the mechanic overnight to cold start it for issues that only happen at cold start smh.

Since there are a lot of food enthusiasts here I thought to share this here and see how people react to it over opening an entire thread.
I guess we all know this food critic Opeyemi.

Somewhere in my head I am often wondering what qualifies him as a food critic.
You must be a master of an art before you qualify to critic it.
I assume you must have gone to a culinary school, worked or owned a restaurant.
Cooked specific dishes over a million times before you can qualify to be a critic.

How can someone who can't cook afang soup for example critic the soup. How do you even know what to look out for

Can I just wake up someday and declare that i am a doctor. Even if u had gone to medical school, you'd still have to do housemanship etc before you are qualified.

But in this generation anything goes, especially on the social media space.


To critic food is a little different. You don't have to be able to cook food to appreciate it or have a refined pallet. It might actually be better if your don't know how to make the dish so biases about level of difficulty don't influence opinion of the actual dish.

That being said, I have no idea who that Opeyemi person is, but there are way too many food critics online who just try leverage their followings to extort for good reviews.
