I want to start processing my POF but my sponsor (which is my aunt) said she wants the money to be in her bank and I should use her bank statement. But when applying to my school I picked the self funded option because I thought she was going to send the money to me.
Now my question is would I be able to use her bank statement, if yes, would I need an affidavit or just a consent letter would suffice.

You are likely to be denied. It is only ur parents or spouse that can sponsor u. Except u have dpcuments to show she is ur legal guardian. I have no idea what legal guardian documents look like.

If you removed for any other reason OYO is your case,that's the reason I reiterated saying the funds are for your studies
